Upside of the Down Economy-Great Chefs. Small Spaces.

Yes. ANOTHER blog about the state of our financial nation, ugh! But this time, it is about a good thing that has happened… At least for us foodies! Big salaried Executive Chefs were laid off in droves due to the economic downturn and rather than return to the lines, many opened their own restaurant.  Where we can now benefit from a 5-star Chef (no line cooks preparing the food here) personally cooking our food and get that outstanding cuisine for a song.

For example, Chef Ivan Flowers. A 5 star Chef that was at the helm of L’Auberge in Sedona & Different Pointe Of View in Scottsdale. Well, when he was downsized, he opened a small bistro in Sedona-Fournos. It is all of nine tables with a tiny kitchen. But what Chef Ivan Flowers creates on those six burners and one stove is swoon worthy. Delicate Ahi dishes on corn fritters, fresh mozzarella, delicious Italian specialties and all at a fraction of the price you would have paid for his cuisine at the large venues. Plus you get to meet the Chef. Every night he is on the floor, chatting with diners and checking on their satisfaction. In fact, Fournos Restaurant was just named one of the top 25 in Arizona by AZ Highways Magazine, so I am not the only one discovering this trend! So, let’s rejoice and enjoy this time. Because eventually the economy will come back, and the Chefs will return to the large kitchens with full staffs, and we will be left with the memory of eating 5 star cuisine in 9 table joints!

Bistro Love!

Okay, I have to admit I have a serious case of bistro love! I love a great bistro! Small, intimate, cool music & service, plus normally the actual Chef does the cooking, not some line cook. Add in affordable boutique wine lists and you have a winning recipe (pun intended)

When I lived in Venice Beach, Ca I was surrounded by many fabulous bistros that I frequented regularly. But now, in Sedona, AZ there is only ONE. Yes, you read right, ONE!

My favorite bistro in Venice Beach was a place called 12 Washington. It is on Washington Boulevard, just a stone’s throw from the beach. Pierre, a French Chef was the owner & cook.  It was small, maybe twelve tables, with fabulous pink hued lighting that made every woman look gorgeous (leave it to the French). Think Cybill Shepherd on Moonlighting!  A huge map was on the wall as you walked in and Pierre had marked every place he had been… The food was unbelievable! Small French inspired menu with a chalkboard of specials. Perfectly dressed salads, pasta primavera that was off the charts, warm crusty bread with herbed butter… And the wines! Such a great variety of hard to find french reds. Still dream about the place.

In Sedona my favorite (and only, but would still be my favorite even if there were 100) is Fournos Restaurant. Chef Ivan Flowers creates 5-star cuisine in a nine table bistro. Like I said, nine tables, Frank Sinatra/Dean Martin playing, server that remembers you EVERY time & Chef Flowers himself comes to personally check on your meal. The food is over the top! Chicken Milanese, Prince Edward Island Mussels in garlic thyme chardonnay sauce, stuffed Filet Mignon with garlic curry au gratin potatoes… Excuse me while I wipe the drool from my mouth! The bread and dipping sauce alone is reason enough to go to Fournos. Warm herbed bread with a garlic, olive oil, pesto dipping sauce. I could drink it! Fabulous little wine list. It is everything a bistro should be…

Chef Ivan Flowers & Fournos Restaurant Sedona named in Top 25!

I am always excited when one of my favorite places to eat gets recognized. And this is big! Fournos restaurant Sedona was just named one of the top 25 in Arizona by AZ Highways Magazine!

Chef Ivan Flowers creates over the top delicious Mediterranean-Italian cuisine in a small (nine tables!) space. Think a Napa Valley Bistro in Sedona, Arizona. The Chef personally prepares EVERY dish himself…No line cooks here!

Food so good it makes you swoon!

Happy belated Valentine’s Day! Or How I Ate My Heart Out at Fournos in Sedona.

Yes, restaurants are overcrowded and full of unhappy couples on V-Day. But, guess what? I didn’t care! After years of being the person serving dinners to those unhappy couples I was THRILLED to be out & be the one dining for a change!  My Valentine & I went to Fournos restaurant in Sedona, AZ.  LOVED every bite.  It was a 3 course set menu that came with a free glass of surprisingly good Prosecco.  I started with the Caesar salad with house made dressing. What a Caesar should be… Creamy, garlicky, and crisp. He had the lobster bisque soup. the bowl left the table completely clean.  For our entrees, I had the Mahi Mahi in a citrus tomatillo sauce, olives, cognac mushrooms & fresh avocado. Seafood is flown in from Hawaii and perfectly cooked. Sauce was tangy and balanced. He had the rack of lamb in a garlic basil crust with a lemon cream ragout of artichoke hearts, russian fingerling potatoes & confit tomato. Simply fabulous. For dessert, both made in house, I had the tiramisu with Belgian chocolate & he had the warm apple crisp. Switched halfway through.. Both were divine! Shared a bottle of Michael Sullberg Cabernet.  This is THE place to eat in Sedona! Really, over the top food in a bistro like setting. I mean, the Chef (5-star Ivan Flowers) actually cooks your meal! Hurry and go… Fournos is about to be featured in next months AZ Highways.
